Vegan Halloumi, Parmesan & Caesar Salad - Summer Series Ep 4

Halloumi 1 Block of firm tofu in brine (pressed for 1/2 hour or as long as poss) Juice of one lemon 5Tbsp Nutritional yeast 1tsp Salt 1tsp White miso paste Parmesan cheese 50g Cashews (unsalted) 4Tbsp Nutritional yeast 1/2tsp Salt 1/4tsp Garlic powder 1/4tsp Vegan lactic acid powder Caesar Salad Dressing Juice of 1/2 lemon 4Tbsp Vegan Mayonnaise 1tsp Capers 1tsp Seaweed Start by pressing your tofu, I press mine in some paper towels and a tea towel for around 1/2 an hour (or longer if possible). Mix up your Halloumi marinade, mix the lemon, nutritional yeast, salt and miso paste, together in a bowl, slice your tofu in Halloumi strips and then smoother the marinade over the tofu and set aside for as long as possible, the longer you leave it the deeper the marinade flavour is on the tofu. You could cover the marinading tofu and leave in the fridge for the day. Next to whiz up the Parmesan cheese, put your cashews, nutritional yeast, salt, garlic and lactic acid in the nutri bullet and blitz a few times until you get a really fine powder and set aside, you can keep this in an air tight container and keep it as a cupboard staple. Now to whip up the Caesar dressing, add your fresh lemon juice, vegan mayonnaise, capers and seaweed in a bowl and whisk together. You could use cos lettuce for an authentic Caesar, I used finely chopped Kale, make sure you add the dressing at the very last minute, as dressings start to cook the salad leaves, so its always best to dress them last. Capers and seaweed make a great substitute for anchovies in a Caesar dressing. I get my seaweed literally from the sea, if you do this make sure you wash it very thoroughly (I wash mine at least 5 times through) then dehydrate it and crumble it into an air tight container. This will keep for around 3 months if thoroughly cleaned and dried. Otherwise you can get seaweed sheets from a supermarket, you can even buy seaweed ‘crisps’ now (be careful as they will already be seasoned so you will need to adjust your salt levels, they are just seaweed and salt). Then lastly, fry up your Halloumi both sides until golden brown and push them down as you cook them to help them get as dense as possible to get to the Halloumi texture. Now, you are ready to dress the salad and dive in.
